INGREDIENTS

  • 1 minced onion

  • 2 tablespoons of butter or olive oil

  • 3 russet potatoes, peeled and cut

  • 2 stalks of celery chopped

  • 6 cups of seafood stock

  • 1 cup of milk

  • 1 sprig of thyme

  • 1 tablespoon of Old Bay Seasoning (can be found in the seafood area)

  • 3-4 tablespoons of flour

  • 1 cup of peel shrimp

  • 1 cup of swai fish

  • Salt and pepper as desired


Directions

  1. Melt butter or oil in a skillet over medium heat.

  2. Add the celery and the onions and cook for 3-4 minutes or until both have softened.

  3. Add the flour and the potatoes and let it cook for a bit.

  4. Add the broth and stir.

  5. Add the Old Bay, milk, and 1 full sprig of thyme.

  6. Bring it to a boil.

  7. Once the chowder has boiled, bring it to a simmer and cover the pot. Let it simmer until potatoes have softened.

  8.  Remove the stem of the thyme and add the shrimp and the fish.

  9.  Add salt and pepper as desired and let it simmer for another 7 minutes.

  10.  Sprinkle with coriander and eat with French bread or crackers.
