ingredients

  • 1 eggplant (peeled)

  • 1 tomato

  • salt to tast

  • pepper to taste

  • 2 table spoons olive oil

  • red chili flakes

  • 3 garlic cloves

  • 1/4 cup parsley


Directions

  1. In a skillet add oil and mashed garlic cloves

  2. Let the cloves cook, then add the peeled eggplant and tomatoes to the pot.

  3. Stir and cook over medium heat until eggplant is brown.

  4. Once eggplant has browned, add the salt, pepper and red chili flakes.

  5. Add water as needed to make the eggplant soft.

  6. Move to plate and top with parsley.
