INGREDIENTS
4 pounds beef boned with marrow
2 medium onions, sliced
4 chopped celery stalks
4 chopped carrots
1 tsp whole pepper corns
1 tsp salt
4 garlic cloves, smashed
2 bay leaves
3 spring of fresh thyme
5-6 sprigs of cilantro
1/4 cup of apple cider vinegar
1 tsp of fresh ginger
15-20 cups of cold water
Directions
In a 10 quart crock-pot, place all ingredients
Add water
Let all ingredients boil over high heat then reduce temperature and simmer gently over low heat
Simmer for 24-48 hours
Remove from heat and allow to cool
Discard solids and strain remainders in a bowl, then let stock cool to room temperature
Cover and chill
Use broth within one week or freeze up to 3 months
