INGREDIENTS
- 4 pounds beef boned with marrow 
- 2 medium onions, sliced 
- 4 chopped celery stalks 
- 4 chopped carrots 
- 1 tsp whole pepper corns 
- 1 tsp salt 
- 4 garlic cloves, smashed 
- 2 bay leaves 
- 3 spring of fresh thyme 
- 5-6 sprigs of cilantro 
- 1/4 cup of apple cider vinegar 
- 1 tsp of fresh ginger 
- 15-20 cups of cold water 
Directions
- In a 10 quart crock-pot, place all ingredients 
- Add water 
- Let all ingredients boil over high heat then reduce temperature and simmer gently over low heat 
- Simmer for 24-48 hours 
- Remove from heat and allow to cool 
- Discard solids and strain remainders in a bowl, then let stock cool to room temperature 
- Cover and chill 
- Use broth within one week or freeze up to 3 months
