INGREDIENTS

  • 4 pounds beef boned with marrow

  • 2 medium onions, sliced

  • 4 chopped celery stalks

  • 4 chopped carrots

  • 1 tsp whole pepper corns

  • 1 tsp salt

  • 4 garlic cloves, smashed

  • 2 bay leaves

  • 3 spring of fresh thyme

  • 5-6 sprigs of cilantro

  • 1/4 cup of apple cider vinegar

  • 1 tsp of fresh ginger

  • 15-20 cups of cold water


Directions

  • In a 10 quart crock-pot, place all ingredients 

  • Add water

  • Let all ingredients boil over high heat then reduce temperature and simmer gently over low heat

  • Simmer for 24-48 hours

  • Remove from heat and allow to cool

  • Discard solids and strain remainders in a bowl, then let stock cool to room temperature

  • Cover and chill

  • Use broth within one week or freeze up to 3 months
